The arrival of fresh, cool foods and summer dresses are just around the corner. With summer coming soon, it is getting to be time to preserve some of that springtime goodness. Jams and preserves keep the delicious spring fruits on our plates and in our memories long after the season has passed. In my opinion, strawberries and rhubarb are some of the best things to have leftover from the springtime season. </div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">Last weekend, I went to a good friend's house for brunch. It was such a delight! We sat outside in the morning sun catching up on life then prepared a morning feast. We dined on basil, parsley <a href="http://gfreeveggie.blogspot.com/2011/05/two-egg-omelet.html">omelet</a> with sharp cheddar as well as gluten free cinnamon raisin pecan bread, Greek yogurt, oranges, and this strawberry rhubarb preserve I had made that morning. Let me tell you, this preserve complimented <em>everything</em> on our plates so well! I would especially recommend combining it with yogurt.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">A couple of weeks ago, I made <a href="http://gfreeveggie.blogspot.com/2011/06/rhubarb-jam.html">rhubarb jam</a> which was so delicious that it didn't last very long at all, so when I was planning this recipe, I decided to be slightly more ambitious and make more than just a half cup...especially since I would be sharing it with friends this time! In retrospect, making jam in the oven is much simpler than on the stove top which requires constant monitoring, but let me assure you that the result of all the work to make this strawberry rhubarb preserve is fantastic! </div><div class="separator" style="clear: both; text-align: left;"><br />

Also, I do not cover the canning process in this post so the shelf life will be shorter. If you do wish for a longer shelf life, please reference other sites that provide methods for canning. Finally, plan ahead! 2. Toss strawberries, rhubarb, and 1/3 cup sugar in a large bowl. Zest and juice lemon into the mixture. Stir well. Now, let it sit on your counter (room temperature) for eight hours to allow the strawberries and rhubarb to macerate. Cover the bowl with a kitchen towel to prevent things from landing in it. 4. Add a little more than half of the fruit to the boiling syrup. Bring back to a boil and cook vigorously, stirring, until fruit is broken down and scraping a spoon across the bottom of the pan will leave a stripe of bare pan that fills in slowly. Lower the heat if the preserves begin to scorch. <br />

NOTE: Because there is less sugar in this recipe than the standard, it is important to be sure that the fruit mixture is quite thick before adding the rest...especially if desire pieces of fruit in the final product. </div><div style="margin: 0px;"><br />

5. Add cinnamon and the remaining fruit. Bring back to a boil and cook, stirring constantly, until fruit softens but does not disintegrate. If you want it to be more constant texture through out, then cook for longer until the fruit softens to your liking. Taste and adjust sugar if necessary. Stop cooking when a spoon dragged across the bottom of the pot leaves a clean stripe and the suspended fruit has a texture that you like. </div><div style="margin: 0px;"><br />

2. While onion is cooking, prepare the kale by removing the center stem all the way up the leaf. Cut the remaining, curly leaf into bite size pieces. Rinse the chopped leaves to be sure all dirt is removed.<br />

3. Once the onion has begun to brown, toss in the garlic and sauté about minute. Add kale and let that cook in the pot while you add the parsley, basil, and oregano.<br />

While growing up, taco night in my family's house consisted of a seasoning packet tossed into some ground beef or ground turkey fried in a pan. Now that I am steering clear of both meat and prepackaged goods, this meal plan no longer really works. The following recipe is my first attempt at seasoning my first fajita bowl. It was quite tasty, but still needs some tweaking. Some variations I may try for next time is removing the cumin and adding some vinegar, perhaps of the red wine variety. 2. Chop the onion. Heat a pan with olive oil. Once the olive oil is hot, toss the chopped onion into the pan and listen to it sizzle! Turn the heat to low and let the onions cook for about 10 minutes.<br />

Once the onions begin to look translucent, add the cumin, chili powder, and oregano. Incorporate the spices fully then add the garlic. Cook for one minute, then add mushrooms.</div><br />

5. It takes a while for the peppers and carrots to cook, so while they're doing their thing, this is a good time to slice avocado, cut lime into wedges and chop the tomato and cilantro (and prep any other topping you choose!).<br />

Sometimes I think I think I'm a genius. I was missing some of the foods that contributed in creating my southern roots. Sweet iced tea was at the top of the list! When I thought of this drink with combination of ginger, peach, and strawberries, I thought it would be great! But soon, I was put in my place again. The ginger was slightly too overpowering for the strawberries so this glorious fruit did not end up contributing as much as I had liked. Overall though, it was a lot of fun drinking this iced tea for the pure beauty of drinking iced tea with strawberries out of a mason jar.<br />

<b><u>Ginger Peach Tea with Strawberries</u></b><br />
<br />
2 tea bags of ginger peach tea<br />
Large mason jar<br />
Honey<br />
Ice cubes<br />
2 strawberries, stems removed, sliced<br />

At the risk of being slightly absurd, here is the recipe for the iced tea:<br />

Boil Water. While water is boiling, put the two tea bad in the mason jar. Once the water has boiled, pour the water into the mason jar 2/3 of the way full. Let steep for 5-10 minutes. Stir in honey to your preferred sweetness. Let the tea cool for as long as you can, this reduces the number of ice cubes you will need to use and thus prevent the tea from getting too diluted. (putting the tea in the fridge speeds up the process) Once you have waited as long as you can wait, remove the tea bags and fill the rest of the glass with ice. Stir in strawberry slices and enjoy!<br />

If any of you listen <a href="http://prairiehome.publicradio.org/">Prairie Home Companion</a>, then you know exactly what I'm singing about! I just kept humming this little melody while chopping the beautifully pink vegetable. Admittedly though, I'm not making rhubarb pie, but jam is just as delicious! And boy, for a rainy day, I can't think of a better way to warm up the kitchen than with a sweet, cinnamon smell of roasting rhubarb!<br />
<div>So, to lay it all out, I had never made jam before this moment. But let me tell you it was so quick and easy that I'll probably start making jam much more! It is just so delightful to spread warm jam on some morning oatmeal, crackers, or my personal fave: <a href="http://gfreeveggie.blogspot.com/2011/05/mothers-know-best-chocolate-chunk.html">chocolate chip cookies</a>!<br />

<b><u>Rhubarb Jam</u></b><br />

1 pound rhubarb, tough ends removed & cut into large chunks<br />
1/4 cup brown sugar<br />
scant 1/2 teaspoon cinnamon<br />

</div>2. Toss rhubarb with brown sugar and cinnamon in a nonstick baking dish. Roast for 20 minutes until thick and bubbly. Keep an eye on it since this is a sugary dish thus it can burn easily. (Even if it does burn, the jam is not ruined, just don't scape the burnt bits off the bottom.)<br />

3. Remove the sweet rhubarb from the oven and scrape contents into a small mixing bowl. Mix the pink goodness well, then let cool completely. Transfer to jar that can be sealed tightly. <br />

<span style="font-family: inherit;">An evening of celebration! One of my close friends just graduated! So of course it is important to take time to celebrate such an accomplishment. The party was a 1920s themed so I started cruising the Internet for party recipes from that decade. When I realized that my options were dishes like "Nuts and Date Salad Mayonnaise" or "Jellied Tomato and Pimiento Salad with Olives and Celery Hearts," I decided that perhaps a throw back dish would not be quite the hit I was looking for. Also, as a side note, did you know that all of the following foods were introduced in the 1920s?</span><br />

<span style="font-family: inherit;">I am so pleased that I got to do a party cake especially since it usually takes the excuse of a special occasion to make a cake rather than just choosing to eat one all by yourself! This is the first time I made the following recipe. It has been modified from various different sources and it turned out so well that I want to make this cake over and over again! It has that moinst, dark-chocolate richness that melts in your mouth. Plus, it is so simple that it does not take more than an hour of active cooking time. Thus, twice as fabulous! </span><br />

While the water is heating up, chop up the butter and 5oz of your favorite dark chocolate into small pieces and put them in the top part of the double boiler. Melt chocolate with butter, stirring, until soupy and smooth. (No stress if you don't have a double boiler, I don't either, so I used a pot and then put the chocolate and butter in a smaller sauce pan with a long handle.)</span></div><span style="font-family: inherit;"><br />

Multiple times a year during my childhood, my parents would pack up the car, stuff the kids in the back seat, and we would take a two hour drive to visit the grandparents who lived on top of a mountain in the southern foothills of the Appalachians. <br />

One can do so much eating over Memorial Day weekend! It is always exciting to pack a picnic and head to the bay side to crack into some fresh oysters while munching on fresh cherries and quinoa salad! We prepared the quinoa salad ahead of time and stuck it in a cooler with some fresh cherries, and left overs from our cook-out the night before. We headed up to Tomales Bay Oyster Co where they have scores of picnic tables each decked out with a bbq and an oyster shell recycling bin.<div><br />
</div><div>The scene there is always lively on a beautiful day and I love being surrounded by various people having a good time around fresh food and a smokey bbq. For the picnic, we opted to eat our oysters raw. When they have just been pulled out of the bay <i>that day</i>, it is not possible to get any fresher and the best opportunity to eat some good seafood!<br />

<b><u>Oysters Raw</u></b><br />

You will need an oyster shucking knife and as many raw oysters as you think you can eat! <div><br />
</div><div><i>Picking oysters: </i>When choosing oysters, it is important to make sure they're fresh so there are two rules!<br />
<div> 1. they do not smell </div><div> 2. they should not be open. If it is open, it should quickly snap shut once tapped. </div><div><br />
</div><div>If the oyster doesn't fit both of these criteria, <i>don't buy it!</i></div><div><br />
1. To shuck, hold the oyster firmly in one hand with a cloth towel so the shell does not hurt your hand. If you can, find a bit of a gap in the oyster shells and slip the knife blade between the shells. Ideally, the hinge of the two shells will be opposite of where your leverage is with the knife.<br />

2. Using a twisting motion, pry the top and bottom shells apart. Run the knife around the oyster continually doing this. Try not to lose the delicious brine inside! We ended up ordering too many oysters so we had the raw for lunch and then took the leftovers home to grill out that evening. </div><div><br />
</div><div><i>Storing: </i>Do not store the oysters in water. If you do not plan to eat them right away, arrange them flat on a tray, cover them with a damp towel, and store them in the refrigerator. They'll keep this way for about a day. Or if you're on an out door adventure like we were, keep them in a cooler with a bag of ice on them until you can get to a refrigerator.<br />

<b><u>Spicy Quinoa, Cucumber and Tomato Salad</u></b><br />

1 cup quinoa <br />
3 cups water <br />
Salt to taste <br />
2 cups diced cucumber <br />
1 small red onion, green onion, or shallot finely minced (optional) <br />
2 cups finely diced tomatoes <br />
1 to 2 jalapeño or serrano peppers (to taste), seeded if desired and finely chopped <br />
1/2 cup chopped cilantro, plus several sprigs for garnish <br />
2 tablespoons fresh lime juice <br />
1 tablespoon red wine vinegar or sherry vinegar <br />
3 tablespoons extra virgin olive oil <br />
1 avocado, sliced, for garnish <br />

1. Bring the 3 cups water to a boil in a medium saucepan. Rinse quinoa and add to boiling water along with a dash of salt. Simmer for about until most of the water has been cooked into the grain. Cover the pan and allow to sit while you are preparing the veggies.<br />
<br />
2. While the quinoa is cooking, finely chop the jalapeño and onion. Since they will be raw, you only want small bits of these in your mouth when eating the end product. Chop cucumber, cilantro and tomato. </div><div><br />
3. Combine the tomatoes, cucumber, onion, chilies, cilantro, vinegar, lime juice and olive oil in a bowl. Add quinoa then toss together, and taste and adjust seasonings to your liking. Serve garnished with sliced avocado and cilantro sprigs.<br />

Getting ready for the week takes lots of planning. I like to make lunches that I can easily put into to-go containers throughout the week. Egg salad definitely fits into that category! This is a new recipe I tried from <a href="http://simplyrecipes.com/recipes/curried_egg_salad_with_mango_chutney/?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%3A+elise%2Fsimplyrecipes+%28Simply+Recipes%29">Simple Recipes</a>. I cut down on the chutney and added some celery to reduce the sweetness. Plus, the cilantro lover that I am, I can't resist adding it to dishes for an extra twist. <br />

The initial inspiration came from one of my favorite dishes that I periodically order at a local tea shop. This recipe comes close, but <em>not quite</em>. I will have to continue to tamper. I hard boiled the eggs by bringing water to a boil then placing the egg in the boiling water. After about 12 minutes I remover the eggs from the water and rinsed them in cool water to prevent them from cooking any further.<br />

2. Place peeled, hard boiled eggs into a medium sized bowl and roughly chop by taking two table knives and slicing them accross the eggs. (To make a finer egg salad, you can use forks to press against the cooked egg pieces to break them into smaller pieces.)<br />

We had bags filled with cherries, zucchini, asparagus, apricots, peaches, snap peas, cilantro, cucumber, shallots, avocado, kale, and kiwi. We were fortunate to find that there was just enough <strong>herbes de provence</strong> to lightly coat the zucchini and the asparagus with some vegan butter we found in the fridge. For future grillers, I would def recommend the herbes de provence but would switch the oil to some nice <strong>extra virgin olive oil</strong> for nicer flavor.<br />

This was the first time I was in charge of the grill so there are a few things I learned from this first experience.<br />

+ <strong>Grill Longer. </strong>Generally, I prefer to cook my veg al dente. Non-mushy vegetables are a definite plus. So I ran into an issue with the grill: take the veg off the grill with the typical "cookedness" I enjoy <em>or</em> cook longer for the nice char-grilled taste. I ended up choosing the first option and pulled them off too soon and found that I would have like to leave them on to have more of that smokey flavor I so love about cooking out. <br />
<br />
+ <strong>Spices and Marinade. </strong>The herbes de provence was an excellent addition to our cookout. I would like to experiment more with fresh herbs like rosemary and thyme as well as vinegars and sauces.<br />

+ <strong>Peaches.</strong> Peaches are sweet, tender, and juicy so I placed them further away from the fire thinking that they would not respond well to such high heat. In the end, despite leaving them over the fire for a longer period of time, I wanted them warmer and more of that great grilled flavor. They were so delicious! It's like cobbler! I would recommend it with chocolate and ice cream!<br />

Despite all these modifications listed above, this was still a very delicious meal. We had just finished eight miles of hiking in fantastic and sitting on a beautiful beach. Being outside with the setting sun with marvelous company and a hungry belly only enhanced the enjoyment of the fresh produce we picked up that day. I look forward to many more cook-outs this summer to perfect my skills as a master griller! <br />

To save dishes, you can use the same pan you used to blanch the greens; just dump the water out first. Heat oil in the pan over medium-high heat. Ahh... summertime, the season of fresh corn and tomatoes. Ok ok, it really isn't summer <em>yet</em>, but when your local market already has ears of corn at summer discounts and the tomatoes are looking so fresh and good, who can resist? <em> </em> I get this recipe from Annie Somerville's<em> Fields of Greens</em> cookbook. Her flavor combinations in this book are fabulous and has a wide variety of selection to fit your mood. I like this dish because it is a fresh, tangy meal that can be eaten hot out of the pan or stored packed in lunches and eaten chilled throughout the week.<br />

<b><u>Spicy Corn with Lime and Cilantro</u></b><br />

1 Tbs olive oil<br />
4 ears of corn shaved, or approx. 4 cups of corn kernels<br />
1-2 jalapeño, seeded and diced<br />
salt<br />
2 Tbs sherry vinegar<br />
4 tsp lime juice<br />
cayenne pepper<br />
1 scallion, white and green parts, thinly sliced<br />
2 Tbs chopped cilantro<br />
1 cup chopped tomatoes (approx 1 large tomato or half pint of cherry tomatoes)<br />
black pepper<br />

1. If you use frozen corn, have it defrost in a colander at least an hour before you make this dish. It helps to periodically rinse the corn in cold water to aid in the defrosting process.<br />

2. Heat olive oil in a large frying pan and tilt the pan from side to side to cover the bottom with the oil. Toss the diced jalapeños in the pan with a pinch of salt. Sauté at medium heat until they begin to turn brown.<br />

3. Increase the temperature of the stove top to medium-high heat and add corn to the pan. Stir until the jalapeños have been incorporated then let the corn stand in the pan for several minutes to allow it to toast. Once the kernels at the bottom of the pan begin to turn brown in color, stir and let stand again. Repeat until corn is cooked to your liking (this should not take longer than 10 minutes!).<br />

4. Remove from heat. Stir in vinegar, lime juice, and cayenne pepper to your taste. Let corn cool while you chop the scallion, cilantro and tomato then mix them in. Add salt and pepper to taste.<br />

Gluten is a compound of elastic proteins in the family known as prolamins found in certain members of the grass family. Gluten is in wheat, barley, and rye. It is composed of glutenin and gliadin (in wheat - including kamut and spelt), secalin (in rye) and hordein (in barley). The word <em>gluten </em>comese from the Latin word <em>glue</em> and it gives elasticity to dough to help it to rise, keep its shape, and often giving the final product a chewy texture. Gluten is also used as a source of protein in prepared foods and as an additive to foods otherwise low in protein or in the form of a flavoring, stabilizing or thickening agent. <br />

Bread is typically made from grains such as wheat which contain gluten. Gluten-free bread is made with ground flours from a variety of materials such as rice, sorghum, corn, or legumes like beans, but since these flours lack the sticky gluten it can be difficult for them to retain their shape as they rise and they may be less "fluffy". Additives such as xanthum gum, hydroxypropyl methylcellulose, corn starch, and eggs are used to compensate for the lack of gluten. Oats are a bit of a question. Originally, oats were cut out of the gluten free diet because they are all process in facilities that process wheat, so by default, oats had gluten in them. Recently, there is now a place where oats can be process in a gluten free facility, so some celiacs have incorporated these oats back into their diet. However, some research indicated that a protein naturally found in oats closely resembling wheat gluten and can cause a reaction in some celiacs.<br />

The max safe level of gluten in a finished product is less than 0.02% . What a great opportunity to walk to the farmers market to pick up fresh produce for the week and then put it in your breakfast! You ever have those days where you are just <em>craving </em>something chocolaty and sweet. Today is one of those days and I have had chocolate chip cookies on the mind for at least a week now. Currently, my favorite chocolate chip cookie recipe comes from E's mom. She brought them over for a birthday celebration and I ended up eating most of them! So below is my first attempt at making this recipe gluten free. <br />

Growing up, there were not many gluten free baking books in the house, my mom just kept her <a href="http://gfreeveggie.blogspot.com/2011/05/moms-gluten-free-flour-mix.html">homemade gluten free flour mix</a> on hand. I definitely recommend this recipe since it does not have a strange grit or funny after taste that many gluten free flour mixes have. It seems to work almost as well as regular flour and can be a substitute at a one to one ratio. That easy. <br />

While I was growing up, my mom would make BIG batches of this gluten free all purpose flour mix. She would toss this recipe into a big tupperware container and store in the freezer. So whenever one of her four children got the hankering for some freshly baked treats, it was easy to grab any ol' cookbook (gluten free or not) and follow a recipe to delicious ends. <br />

To make life simple, when there some down time, I make a batch of this mix so that next time I have a craving for some freshly baked treats, I can toss together any recipe I want! If you are not close to a store that provides these ingredients, online outlets like <a href="http://www.glutenfree-supermarket.com/default.aspx">Authentic Foods</a> and <a href="http://www.bobsredmill.com/">Bob's Red Mill</a> will be able to fill the bulk of your order for this recipe, the rest should be easily found in your standard grocery store.<br />

As the title of this recipe infers, this is great for making breads, but it is also excellent as an all purpose flour mix.<br />

This minty pea soup is a great introduction to Spring with its fresh and tangy lightness that still leaves you with the feeling of home comfort. It can be made in under an hour for a quick evening meal and can also be served chilled so this recipe is fantastic to make ahead of time if you plan to have guests over. One thing to note is that frozen peas make this dish more budgetable and does not detract for the nutrition value of the meal. I found this recipe on <a href="http://www.chow.com/recipes/29519-green-pea-soup">Chow</a> and have modified it by adding white balsamic vinegar for a more crisp taste, but the essence is still there.<br />

<strong><u>Mint Pea Soup</u></strong><br />

1/2 Tbs unsalted butter<br />
1 medium leek, trimmed to white and light green parts only, halved lengthwise, thinly sliced and rinsed<br />

This recipe is simple and quick which makes it great for the middle of the week! I keep Thai curry paste in the freezer and coconut milk on the shelf for just these evenings. What I like so much about this dish is that it can so easily be modified to your personal preferences. I have made this dish with only shrimp and again with only veg. It's a great dish to use up the extra contents of your fridge and also exciting enough to serve up to guests!<br />

1 yellow onion, chopped<br />
1 green bell pepper, chopped<br />
3 Tbs Thai curry paste <br />
1 lb uncooked shrimp (I get the frozen bag from Trader Joes)<br />
1 cup coconut milk<br />

- if you have frozen shrimp, put them in a colander and run <em>cold</em> water on them. set them aside to defrost. Once the shrimp is defrosted, they are easier to eat later if you go ahead and remove the shell. I also de-veined them, this is a personal preference.<br />

We are now mid-way through <a href="http://www.celiaccentral.org/awarenessmonth/">National Celiac Awareness Month</a> so I cannot think of a better time to start my own blog to add another story to the thousands already out there.<br />

I first learned about Celiac Sprue when I was in middle school. I remember sitting outside on a bench of my junior high busy being irritated with my mother for being late <em>again</em>. After two hours of waiting, my mother pulls up and I climb into the car in somewhat of a huff. It didn't last long though cause my mom soon broke the news that she had just been diagnosed with <a href="http://www.diabetes.org/diabetes-basics/type-1/">Type I Diabetes</a>. Her pancrease was no longer making insulin on its own so she would now have to manually regulate her blood sugar by giving herself insulin doses at each meal. This requires close tracking of blood surage and sugar intake so blood sugar count does not dip too low or raise too high. The mysterious part of all this though is: How did a woman in her mid-forties all of a sudden get a disease that is reserved for children and young teens?<br />
<br />
For a while, no one could figured out what had caused her diabetes. Until one day, my mom's best friend and pediatric doctor that specializes in nutrition mailed her a journal clipping on Celiac Sprue. Celiac is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. In the plain English, this means that my mom was not absorbing the nutrients she needed because her body was fighting against itself. In fact, it had gotten so bad that her pancreas had been eaten away at so much that it could no longer produce insulin, enter Type I diabetes! Her diagnosis of Celiac finally explained her <em>intense </em>abdominal pains, bloating, anemia, and weight loss. That was why she was on the floor in pain so many times! What a relief it was to finally have an explanation to all her health problems!<br />

The "cure" for Celiac disease is a life long gluten free diet. That means no wheat, barley, or rye - or really oats either since all oats are processed in facilities that contains wheat too (though this is changing!). Going from being able to eat anything whenever she liked, my mom had to make a huge life shift. She first had to consider the gluten contents of everything she ate <em>then</em> figure out how much sugar was in her food so she could stick herself with a needle several times per day to give herself insulin shots. Needless to say, it was an emotional roller coaster! <br />
<br />
That was close to fifteen years ago now, the road has been long and rough. Two factors that I have found are key in being diligent and keeping to a gluten free diet is: <br />
1. <strong><u>Learn to cook.</u> </strong>Most processed foods contain gluten so your easy frozen meals and even the pre-grated cheese you get from the store are no longer options. If you are going to enjoy your life with a gluten free diet, it is important to learn to enjoy cooking! Love going to the store and farmers markets to pick out fresh produce, relish in chopping and seeing the combination of colors that go into the sizzling pot and learn what flavors you prefer most so you can in the end delight in the food you have made! <br />
2. <strong><u>Have a great support group.</u> </strong>It is challenging to do it on for a person to do it on his/her own! It is surprising how isolating it is to have separate and different meals that the people you live with. Get your whole family involved at dinner time! Have them help plan meals so they feel like they are a part of the new culinary adventure! Cooking can be great bonging time even before sitting down to dinner.<br />
<br />
If there is any sort of silver lining, it is that my family has now learned to eat SO WELL! Cooking brings us together. We chat while we chop. Share our lives as well as our cooking tips with each other. I have found great love of being in the kitchen and have become very aware of my own food preferences and tolerances. My days are filled with fresh produce at every meal, very few packaged foods, and the love of just reading and sharing recipes! <br />
